Honyaki Compound grind Gyuto 180mm


For great cutting performance, this gytuo has a compound grind: a flat grind near the edge, and a large hollow grind on the rest of the blade. This grind reduces resistance and increases foodrelease while cutting and makes the blade quite light. In short a great slicer with a bit of flexibility near the tip.

The differentially hardened and polished blade gives this knife its characteristic  hamon. 

A beautiful piece of thuya wood is used on this traditional octagonal wa handle with tapered sides.  

Both the spine and choil of this are tapered for excellent comfort for the user.
