Honyaki Gyuto 180mm

The beautiful handle of this gyuto, combined with a finely polished hamon make this kitchen knife very distinct. The handle is a combination of a lively piece of purpleheart wood paired with alternative ivory. The ferrule consists of a heat coloured piece of mosaic damascus steel with incredible details and completes the look of this knife. 

With a convex grind into a thin edge and a distal taper towards a thin tip, this knife is all about fine cutting performance, with a slight bit of flexiblity towards the tip. The differentially hardened and polished blade gives this knife its characteristic and lively hamon. 

The handle is a traditional octagonal wa handle with tapered sides for improved handling of the knife, and the spine and choil are tapered for excellent comfort.
